In my experience Kansas City barbecue is far superior to the Texas variety. Gotta Stan for Austin and points South of there. Dallas/Ft Worth is basically Oklahoma with taller boots.

Maybe if BBQ sauces weren't so strong... If overwhelming sauces are the problem, then allow me to introduce you to Maryland's local barbecue tradition, pit beef. We don't even put sauce on that shit most of the time (although most places that sell it will leave a bottle of sauce on the table for the benefit of those who insist that it isn't proper barbecue without barbecue sauce). Mind you, genuine, old-school pit beef is getting difficult to find even here, so I can't imagine you'd ever encounter any down your way. So maybe you want to look into Alabama barbecue instead. It favors turkey, chicken, and pork, and uses a creamy white sauce that somewhat resembles a smoky version of ranch dressing.

El Santo's honey-sesame chicken:
1. Dredge a bunch of thin-cut chicken breast filets first in flour, then in egg, then in a mixture that's about 1 part sesame seeds to 3 parts panko bread crumbs. 2. Bake for 20 minutes on a broiler pan at 450 degrees. 3. Water down some honey until it's thin enough to run a whisk through. 4. Stir in salt, lemon pepper, ginger, and sweet Hungarian paprika. The liquid should be cloudy and vividly red-orange when you're done. 5. Drizzle the thinned and spiced honey over the chicken once it comes out of the oven.
We had it with steamed green beans, but I see no reason why most other vegetables wouldn't work as well.

I went to Cajun Joe's yesterday seeking ribs and corn muffins. And fried okra. It was 10 after 6 and they were out of almost everything. There was a handwritten sign explaining that they were sorry, but it's hard to get enough of anything of decent quality to make their food. NO corn muffins left. I took the very last biscuit. NO ribs. Only a few pieces of chicken. A container of rice pilaf. Dinner cost me almost $25.
Thank Scrod they had plenty of okra.

Dinner cost me almost $25. I've noticed that barbecue restaurants in particular have been much more starkly affected by the recent surge in inflation than those in other culinary genres. I wonder what that's about?

Don't know for sure, but a guess or three: 1) Meat --it's what's for 'cue 2) The cooking process for Barbecue takes longer and was always more labor-intensive 3) If the 'cue is made traditionally, you're talking about a lot of wood being brought in --transportation == gasoline == expensive

I just went to lunch at the Blue Fin, a relatively upscale sushi joint, and paid $10 less for a plate of calamari and a whole eel roll than I did for that 4-piece fried chicken meal at Cajun Joe's, a down-at-the-heel takeout greasy spoon.

Fair question -- this is Arizona, after all...we got plenty MAGAts. My town, for some reason, is sort of a "foodie" magnet. We have greasy spoons, though, and a few are legendary (and have been in business for decades, to boot). We also have many, many local restaurants that punch far above their weight class, if you're looking for a high-end meal. Can't explain it, but it's so. Up until the pandemic, you could actually get good sushi here too -- which is kind of weird for a town in the middle of a desert. Full disclosure: the last time I went out for sushi, I was in Portland, OR. Better fish and more of it.

Dining on my experimental brain meatloaf, something I'm trying out for the upcoming Halloween party. I just baked it in a brain shape, refrigerated it overnight and then fixed it "a la duchesse" with mashed potatoes tinted pink, swirled to look like brain tissue. It looks great but I'm quite sorry I took someone's suggestion to replace the usual ground pork with Italian sausage. The texture is heavy and awful and even though it smelled incredible when it was baking, the flavor is really lacking.
