Had a one two knock off of successful cooking attempts with a first attempt at tamales sticking the landing, and even better making a version of those scallion noodles from the viral NYT recipe. Alas tragedy struck when I thought adding the cooking oil to the beef and mashed potato patties for tonight's dinner would add an incredible boost of flavor. Instead they came out tasting of musky, skunky used cooking oil. Well, live and learn.

I bought some parsley and some scallions in anticipation of making a Tunisian chickpea stew. Naturally, the weather has just taken a turn for the humid, making the idea of slow cooking something less desirable. I may still very well make it, but either way, I have a tendency to buy bunches of green products only to have significant portions of them turn to slime before I have a chance to use them. I am determined that that will not happen with these two particular bunches of scallions/parsley, so I'm adding them to anything I can think of. Made a standard chicken salad the other night that came out markedly better than usual, largely because of the scallions.

I'm not sure what to call this stuff, exactly. It's based on a recipe for char shue ding, but it has to be something else ding, because Juniper won't eat pork, and I substituted beef instead.
If you have a wok, you should use that. But I don't, so I dumped the following into my biggest frying pan, all diced:
1. A yellow onion of modest size 2. The equivalent volume in celery 3. The equivalent volume in carrots 4. A small can of chopped water chestnuts 5. A small can of whole roasted almonds
Stir-fried the lot in soybean oil until the onion fumes stopped burning my eyes, then added about a pound of shredded beef.
Stir-fried some more until the beef was browned, then added:
1. About 2-3 fluid ounces of soy sauce 2. About 2-3 fluid ounces of sherry 3. About a jigger of hoisin sauce
Stir-fried some more until the liquid was all blended and the beef was thoroughly cooked, then sprinkled with sesame seeds.
I had planned to serve it over lo mein, but it turned out to be so much goddamned food that the noodles weren't really necessary.

This one needs some tweaking, since the alcohol didn't quite cook off the way I wanted it to, but even the first-draft version turned out damned good.
Combine the following in a mid-sized, lidded mixing bowl, and whisk until thoroughly mixed:
1. About 4 ounces of molasses 2. A jigger of bourbon 3. However much powdered cayenne pepper you can handle
Add a couple chicken breast filets to the bowl, and let sit.
When the meat seems sufficiently marinated, cook over moderate heat in a frying pan, together with all the liquid that didn't get soaked up.
Avenues for further experimentation:
1. A little less bourbon? 2. A somewhat weaker bourbon? (I used Maker's Mark, which is 90 proof.) 3. Less time soaking in the marinade? (I threw everything together before going to bed last night, and didn't start cooking until almost 7:00 this evening.) 4. Higher heat to vaporize the alcohol more thoroughly?

Sleeping without a pillow is really changing things for me. Instead of resting all weekend because I was too worn out to do anything, I went out and trimmed trees, weeded, put down some mulch, shopped, AND made a whole-ass dinner with a chicken-and-rice stewlike thing and what turned out to be a delicious peach cobbler I found on Pinterest. I added spices but next time will use less sugar on top. And now I'm going to get on the stairstepper to walk off some of those calories. I DO NOT HAVE A HEADACHE!
