Had a legit good crawfish salad earlier today.
But that's neither here nor there. In my continuing quest to try every new TV chef's frozen meals, I gave this one by Andrew Zimmern a go last night. The seasonings are definitely better in these than your average Banquet or Swanson frozen entree. But those are half the cost of these signature meals, so I guess it just comes down to your discretionary spending habits.

Behold, the power of...soup!
In my quest to make sure that nothing in my extended larder goes to waste - for both environmental and dollar-stretching reasons - I assessed leftovers for lunch today and found that I had some leftover chicken, part of a ham steak and a single sweet Italian sausage that were all approaching their expiration date. So, I sauteed some garlic with celery and carrots, chopped up all the meat and added it and then covered it in water and simmered for a while. I didn't have any onions, but thankfully, the chicken had been cooked in a paprika-onion cream sauce. Turned out to be the best homemade soup I've ever made.
Edited to add: Put the uneaten soup in the fridge for tomorrow. Can't wait to see how even better it tastes after it's had a chance to sit with itself.

I got a wild hair across my adze and made this raw, vegan carrot cake I found on Pinterest. It has zero structural integrity -- you're supposed to freeze it, thaw it for half an hour, then slice it with a hot knife -- but it's strangely tasty. 2 C ground dates, 2 C ground carrots, 2.5 C ground walnuts, a dash of almond flour and some raisins, plus spices and vanilla. I didn't have the moxie to make the icing (mostly raw cashews) after dirtying the food processor and every mixing bowl and measuring spoon in the house.

I had a gyr-rito today. Yep. A burrito/gyro hybrid. I thought it would be terrible, and even told the Greek food truck guy who took my order as much. Turned out it was pretty good! Still prefer just a standard-issue gyro. I think it does prove you can put that seasoned lamb meat and tzatziki on just about anything.

I have Squidmas dinner in the slow cooker, and that looks great, but the cookies were a bust. The gingerbread dough just gummed up the whole kitchen and wouldn't roll out so I pitched it. I managed to burn the orange cookies that have always been a hit for me.
Feh.

In the continuing pursuit of frozen culinary perfection, I sampled this shepherd's pie from Chef Ramsey (whose chicken pie was a hit here): I honestly didn't really think much of it, but I have zero idea what a good shepherd's pie should be like. In all honesty, I'm really fond of these Shepherd's Pies from the healthy section of the frozen food aisles: It's just potatoes, corn, and beef, but it nukes up well.
You may now resume your regularly scheduled thread devoted to actual kitchen wizardry.

I found a green-bean recipe at Pinterest to try. I violated the terms and conditions by using fresh green beans instead of the recommended 5 cans of Green Giant (guh) and I forgot to add the garlic powder until they were already in the oven, but they came out amazing. It made a LOT. I ate about a fourth of the 9x13 baking pan full. I really had my doubts about adding brown sugar and garlic to beans but they were delicious:
ARKANSAS GREEN BEANS
5 cans of green beans, drained, or use fresh 12 slices of cooked bacon, chopt 2/3 C brown sugar 1/2 stick melted butter or margarine 3 t soy sauce or more to taste 1 1/2 t garlic powder
Spread beans in 9x13 pan and sprinkle over the bacon. Mix the remaining ingredients in a bowl and pour ice all. Bake uncovered for 40 mins at 350° F.

They've changed the ingredients to my favorite snack mix. Now it has cheesy poofs.
