How long does the quilting bee think is safe for coffee beans to sit (unopened) before being ground up for use? They're dried/roasted, so I think as long as they don't get damp and somehow moldy, probably forever.

How long does the quilting bee think is safe for coffee beans to sit (unopened) before being ground up for use? Basically what Deeky said: unless they've gotten wet and gone moldy, they're likely safe to drink. Might not taste very good, tho. Coffee will go stale over time, lose aromatics, etc...

Thanks you guys. My niece knows I love coffee, and has bought me beans a couple of years ago and again this past Xmas. Only I have no coffee grinder. You can get a very basic one for like $15.

I made a peanut-butter-and-caramel roll thingy and brought it to work yesterday. It was, Jesus, massacre! There were crumbs and caramel-smeared forks and spoons all over the sink and for some reason, someone took the towel I kept the roll warm under, apparently ran it under the faucet, and left it sopping wet and slung over the coffeemaker. They even left the silverware drawer hanging open like 45's mouth. Christ!
It was just a sheet of solid crescent-roll dough spread with Velvet crunchy, studded with caramels (kimonos removed), sprinkled with chopped honey-roasted peanuts and rolled up. Pressed more peanuts on top and baked it. You'd think these barbarians had never seen food before.

Made this for the Valentine's Day chili cook-off:
APPLE CIDER BEANS
2 c apple cider 2 T cornstarch (dissolved in the cider) 1/2 c maple syrup 3 to 4 T instant minced onion 1/2 t each black pepper and chili powder 1 T granulated garlic Tied into a cheesecloth sachet: 2" of cinnamon stick and 3 whole cloves 4 16-oz cans of soup beans, drained: 1 can ea. light red kidney, dk red kidney, Great Northern, & butter beans 2 lg apples, cored and chopped, skin on 2 gigantic carrots, peeled and chopped 2 gigantic parsnips, peeled and chopped 3 huge ribs of celery, scrubbed and chopped
Throw everything in the slow cooker, leaving the sachet sticking out the top so you can find it and discard it before serving. Cook on low 8 hours. Serve over rice or with spicy cornbread.
